Cumin black beans and corn bread
The basic way to cook dried beans is to wash them in water, discarding any that float. Once
washed, soak them over night with 1/2 teaspoon of salt per cup of dried beans. In the morn-
ing, simmer them for a few hours until they are tender, seasoning them as you go.
If you don't have time to soak them, put dry beans in a pot with 1/2 teaspoon of salt per cup
of beans, cover with double the water (1 cup beans: two cups water) bring the pot to a boil,
put in the crock pot on high and cook until done. Cooking time for beans varies by type,
(pinto, navy, garbanzo) and by the age of the bean. I have found this year's dried pinto beans
take about a half hour less to cook than last year's dried pinto beans. It makes sense to me.
Older beans are more dried out and so need more time to become tender.
Cook 1/2 to 1 cup dried beans per person depending on what you think they will eat. The
beans will double in size once cooked. My husband will eat two cups of cooked beans; I eat
about a cup. But then I need at least half a cup for his bean roll up (beans, rice and cheese
in a flour tortilla) for tomorrow's lunch. So I just round up to 1 cup dried beans per person
and freeze the extra for soup if I have any left over. For my family, that would be four cups
dried beans. Once cooked and doubled in amount, I usually have a cup or two left over for
soups later in the month.
While beans are cooking, saut6 (for each person) 1 tablespoon each of diced onion, diced
carrot and diced peppers.
Once the veggies are sauteed, add 1/4 teaspoon cumin per person (or serving). For my fam-
ily that would be 1 teaspoon. If you have a family of two and used 2 cups of dried beans, that
would be 1/2 teaspoon cumin.
If I have any leftover frozen cilantro stems, I put about 1 teaspoon in for my family of four.
This dish is also very good with smoked paprika, or liquid smoke, a pinch of chipotle and a
bit of bacon if you have it.
Corn bread for four to six
• 1 cup each flour and cornmeal
• 1 egg
• 1 tablespoon baking powder
• 1 cup milk
• 2-4 tablespoons sugar
• 1/4 cup oil
• 1/2 teaspoon salt
Mix together. Pour into small baking pan or loaf pan. Bake at 400 -
utes, or until toothpick inserted comes out clean.
