When it starts to get hot, soups are a great way to lighten up a meal and satisfy
nutritional needs without over heating the house. Below is an outline for a
tomato based soup as versatile as the choices at hand and your imagination. If
the choices are jotted down as the soup is made, new family favorites can find
their way home.
Tomato Soup With Choices
2 to 4 cups tomato juice (see choices)
1/2 to 1 cu p precooked starch (see choices)
1/2 to 1 cup total, cut up veggies, sauteed or
1 TBS per bowl Topper (see choices)
Salt & pepper to taste (optional)
Your type of seasoning blend (optiohal)'
canned (see choices)
Put your choices in a sauce pan large enough to-hold them bring to a bubbling
simmer on medium, turn down on low and let simmer for 10to 15 minutes with
stirring so the bottom won't scorch. Dish into a bowl, top with a Topper and
serve with a salad and/or a sandwich. Or don't. It's your soup, eat it however
you like.
Tomato juice choices: 1) Tomato juice 2) V8 juice 3) 15 oz. can cannedtomatoes
(your choice flavor) pureed then watered down>to: your type of soup consistency
4) Tomato paste watered down to soup cdh iSt hcy:'5) Salsa pureed then
watered down to soup consistency 6) Spaghetti SauCe watered down to soup
consistency 7) Home Dried Tomatoes coffee grinder ground into powder then
reconstituted with water to soup consistency.
Starch Choices: 1 ) Cooked Rice, Wheat Berries, Oat Groats or Barely 2) Cooked
Pasta 3) Diced Boiled Potatoes or Diced Canned Potatoes 4) Canned Corn
Veggie Choices: 1 ) any canned veggieyour family will eat in tomato soup, mixed
veggies, beans, peas, carrots, [maybe nOt pureed pumpkin.] 2) Any veggie on
hand you'd like to sautd, onions, garlic, summer squash.
Topper Choices: 1) Crackers 2) Cheese Fish 3) Breakfast Cereal- chex 4)
Potato, Com, Beet, Kale Any Type Chips 5) Crushed Pretzels 6) Seasoned
Bread Stuffing 7) Sour Cream or Cottage Cheese 8) Camied Meats-Chicken,
Tuna, Ham, Smoked Oysters 9) Thinly Sliced Ribbons of Dell Me tsor Cheese.
