12-- JULy 12, 2017 GOLDENDALE, WASHINGTON Puzzle Page Right after we became husband and wife, as I systematically rearranged my husband's diet to look more like mine, I made him lentils cooked with carrots, celery and onions, spiced up with a pinch of thyme, a dash of oregano, some salt and some pepper. He really liked them and made the mistake of telling me so. They were so easy to make, as an inexpensive 'go to' food he enjoyed, I fed him lentils again and again and again until one day he finally asked his new bride, "1 love your cooking, but can we have something besides lentils?" Lentils with Choices • 1 cup lentils (they will double in size to two cups, more or less) • 2-3 cups water • 1-2 TBS diced onion • 1/4 to 1/2 cup assorted veggies cut into 1/4 inch dice (optional) Rinse with cool water, pour into a sauce pan, add onion and veggies if you are using them. Bring to a simmer; cook until done. They usually only need to cook for 45 minutes to an hour. At this point the lentils can be cooled, put into a sandwich bag (I usually freeze 2 cups lentils per bag. 2 cups is equal to about one 15 oz can.) and frozen for a quick dinner down the road. If frozen, I thaw in ,ridge to ,ridge temperature over night. Or, at this point they can made directly into the following recipes. Simple Lentil Sloppy Joes . One batch lentils (above) or two cups cooked lentils • 1/4 cup sugar (brown or white) • 1-2 TBS vinegar of any type, lemon or lime juice, or dill pickle juice ° 1 15oz tomato sauce and 2-3 TBS tomato paste (about 1/2 6 oz can) .1 TBS your favorite seasoning salt or chile powder (optional) • Bread of any type to heap the lentil sauce onto. To one batch of lentils, add sugar, vinegar or juice, tomato sauce seasoning salt or chile powder, mix well and heat until back to a minutes longer. Heap onto bread and eat & paste, simmer, then 5 Lentil roll ups • One batch Lentils (above) or two cups cooked lentils • 1/8-1/4 tsp cayenne or your favorite hot chile pepper (habanero? Chipotle?) • 1/2 tsp cumin • 1/4 tsp salt (optional) • Tortillas To one batch of lentils add cumin, chile pepper, salt. Heat and serve in corn or flour tortilla. Options: add grated cheese, salsa, shredded lettuce, anything you'd put in a burrito or taco. Cool LentiiSalad • One batch lentils (above) If frozen, let thaw in ,ridge to ,ridge temperature over night. • 1/4 to 1/2 cup your choice of oil and vinegar salad dressing ....... Toss salad dressing with lentils for a cool summer salad. Options: Add a few fresh diced veggies and/or slice olives. Choices are limitless.
